Bourbon: Charles Goodnight Bourbon - Batch 12 (Frank-Lin Distillers Products, LTD) Type: Kentucky Straight Bourbon Whiskey Proof: 100.0 Proof (50.0% ABV) Distilled by: As of 2014, Austin Nichols Distilling Company (Wild Turkey) in Lawrenceburg, Kentucky Nose: Vanilla and rye on the nose. If not for the vanilla, I don't know that I would think this was a bourbon on the nose. It's very rye forward with sweet notes. Palate: Caramel and brown sugar initially. Very subtle heat and smooth, especially at 100 proof. Sweet cinnamon with a just a little bit of tobacco and leather towards the end. A drop or two of water takes out any bite and creates more vanilla. Finish: Medium length finish with a good amount of oak and some heat making an appearance. Geek Fact: This is interesting bottle to say the least. Charles Goodnight is a six year old Kentucky Straight Bourbon Whiskey, bottled in California, honoring the "father of the Texas Panhandle." The brand was originally owned by O'Neil Vitners & Distillers and created by William "Bill" Foley II to honor his great-great uncle, Charles Goodnight's, story. Goodnight was a cattleman, Texas Ranger, real estate mogul, and in 1866, was a literal trail blazer, taking 2,000 head of cattle through what is now called Goodnight-Loving Trail. Able to enjoy the finer things in life, it's recorded that Goodnight smoked 50 cigars a day in his youth until later deciding a pipe was more suitable. As for the bourbon, Bill Foley stated back in October 2014 that he worked with Wild Turkey to develop the bourbon. In 2016, the new owner of the brand appears to be our often mentioned friends at Frank-Lin Distillers.

Kiln •• 📷 Springbank Distillery Kiln @springbank1828 •• Step 3 in the whisky making process is the kiln.  This process takes anywhere from 1.5 - 5 days.  The distillers want to stop the germination process, so they dry the barley with hot air.  It is during this process that some distillers will add peat to the kiln to add the smoky and peaty flavor to the whisky making process.  Originally, this process was done because (especially in Islay) it was very abundant and easy to burn.  Nowadays, it is to maintain the flavor and history of the whisky. At Springbank Distillery, they make three different types of whisky: Hazelburn (unpeated), Springbank (slightly peated), and Longrow (peated). For Hazelburn, they will dry the barley for 30 hours with hot air.  For Springbank, they will do 6 hours of peat smoke and 30 hours of hot air.  For Longrow, they will do up to 48 hours of peat smoke.  They vary the temperature from 45° C to 65° C. •• Personally, my favorite Is Longrow Red. It’s peated and aged in pinot noir casks. What’s your favorite Springbank?
